Full job description

We are looking for an experienced and detail-oriented Halal Restaurant Operation Manager to lead our pre - opening restaurant operations in Malaysia. You will be responsible for ensuring all outlets operate in full compliance with Malaysian Halal Certification requirements (JAKIM standards), maintaining high food quality, service standards, safety regulations, and driving operational efficiency and profitability. You will play a key role in upholding our brand reputation as a trusted Halal food service provider, while expanding our footprint and enhancing customer experience.

Key Responsibilities

Halal Compliance & Assurance:

  • Ensure 100% adherence to JAKIM Halal certification standards, guidelines, and requirements across all outlets — from sourcing, storage, preparation, cooking, serving to waste management.
  • Monitor Halal supply chain: verify suppliers, raw materials, ingredients, and packaging are Halal-certified and approved; maintain proper documentation and records.
  • Conduct regular internal Halal audits, identify gaps, and implement corrective actions; prepare and support external Halal audits and renewal processes.
  • Train all staff on Halal awareness, proper handling procedures, and prohibited practices

Operations Management:

  • Oversee daily restaurant operations, ensuring smooth workflow, cleanliness, hygiene, and food safety compliance (HACCP, Food Act 1983).
  • Standardize operating procedures (SOPs), service standards, menu execution, and kitchen processes across all locations.
  • Manage inventory, food cost, waste control, and operational expenses to meet profitability targets.
  • Ensure compliance with local regulations: licensing, labour law, health & safety, and municipal requirements.

Team & Quality Leadership:

  • Lead, train, and develop outlet managers, supervisors, and staff; set performance goals and conduct regular evaluations.
  • Maintain consistent food quality, portion control, taste, and presentation according to brand recipes and specifications.
  • Monitor customer feedback, resolve complaints promptly, and drive continuous improvement in service and product quality.

Reporting & Planning:

  • Prepare monthly/quarterly operation reports, performance analysis, and improvement plans.
  • Support new outlet opening: site assessment, setup, Halal certification application, and operational readiness.

Requirements

  • Education: Bachelor’s / Diploma in Hospitality Management, Food Service Technology, Business Administration, or related field. Relevant professional certification (e.g., Halal Executive, Food Safety) is an added advantage.
  • Experience: Minimum 4–6 years experience in restaurant operations, food service management, or hospitality industry.
  • Mandatory: Proven knowledge and working experience with JAKIM Halal certification standards and compliance processes.
  • Experience managing multiple outlets or chain restaurants is highly preferred.
  • Strong track record in cost control, quality assurance, and team management.
  • Language Skills: Fluent Bahasa Malaysia & English (spoken & written) – Essential. Proficiency in Mandarin or other local languages is an advantage.
  • Knowledge & Skills:
  • Deep understanding of JAKIM Halal requirements, food safety laws, and Malaysian food regulations.
  • Strong knowledge of kitchen operations, inventory management, and quality control systems.
  • Excellent leadership, communication, and problem-solving skills.
  • Organized, detail-oriented, able to work under pressure and manage multiple locations.
  • Proficient in MS Office, inventory software, or POS systems.
  • Willing and able to travel 20–30% nationwide to oversee outlets.
  • Legal: Malaysian only.
  • Religious Awareness: Understanding and respect for Islamic dietary laws and practices is essential.

Preferred Qualifications

  • Certified Halal Executive or Halal Auditor recognized by JAKIM.
  • Experience working with Halal certification bodies or in Halal assurance roles.
  • Background in F&B chain management, franchise operations, or hotel food service.
  • Existing knowledge of local food suppliers and Halal supply chain network.
